Breeding Eels

I’ve been searching for a while now and have had virtually no luck finding an answer to this question other than "it’s difficult".

I’ve been pondering how exactly to go about breeding 2 eels, specifically golden dwarf eels. I’ve read from some sources that these eels can change their gender and from others that they are just male and female.

Can anyone help me out with some advice on how I’d go about breeding a pair of golden dwarves (and if I need to make sure one is male and one is female or if they’ll just do that for me if and when the time comes)? I can’t really give you specifics on a tank as I don’t have one (merely contemplating this possibility). But if I were to get the eels and tank we’re looking at a rough 125gal tank with likely a snowflake eel for a resident as well (and the necessary filtrations and all that jazz necessary to properly keep eels).
